Guacamole

A healthy, avocado-based dip that goes great with chips or veggies!

Ingredients:
3 medium to large, ripe avocados
½ cup finely chopped red onion
3 tablespoons fresh lime juice
½ teaspoon salt
1 medium tomato, peeled, seeded and coarsely chopped
3 tablespoons chopped fresh cilantro
Directions:
Peel avocados by cutting them in half and removing pits. Using large spoon, scoop avocado flesh from peel. Mash avocados and stir in remaining ingredients.
Cover and chill. Serve chilled, garnished with cilantro. Makes 2 ½ - 3 cups.
Cook's Notes:
I generally add extra salt and lime juice to taste.
